Jared's Chunky Salad

Our fridge was getting bare, so I had to use my creative skills to make a salad. So here it is. It was so good that I'm posting it to the world.
1 med to large eggplant, peeled and diced
1 large zucchini, peeled and diced
1 large green pepper, seeded and cut into chunks
2 tomatoes, cut into chunks
leafy tops from 3 celery stalks, chopped
1/4 med red onion, chopped
1 can kidney beans, drained and rinsed

Mix eggplant with salt and pepper and 1/4 c lemon juice; set aside for 15-30 minutes.
Mix the rest of the stuff in with the eggplant.
Add 1/4 c oil (olive or canola)
Add 1/8 c balsamic vinegar
Salt and pepper to taste
Toss and let incubate in fridge for 30 minutes.
